My Grandma’s Cast Iron Warning: 3 Foods You Should Never Cook in It

My grandma saw me cooking in a cast iron pan, and she was shocked that I didn’t know you can’t cook just anything in it. “That pan has rules,” she said, shaking her head. Curious, I asked what she meant. She then shared three things that should never be cooked in a cast iron skillet if you want it to last for years.

First, avoid highly acidic foods like tomatoes, lemon-based sauces, or vinegar-heavy dishes. The acid can react with the iron, giving food a metallic taste and slowly damaging the pan’s seasoning. While a quick tomato sauce may not ruin it, long simmering sessions can cause problems.

Second, don’t cook delicate fish. Fish can easily stick to the surface and leave strong odors behind. Those smells may linger and affect the flavor of whatever you cook next. A nonstick or stainless-steel pan is usually a better choice.

Third, stay away from sugary sauces for long periods. Thick barbecue glazes, caramel-based sauces, and other sugary mixtures can burn quickly and stick stubbornly to the pan. Cleaning up the mess often means scrubbing away some of the seasoning that protects the skillet.

Grandma explained that cast iron is incredibly durable when treated properly. It’s perfect for steaks, cornbread, roasted vegetables, and many other dishes. By avoiding these three foods, you can keep your cast iron pan in excellent condition and enjoy cooking with it for generations—just like she has.
